Oh hai [04 Jan 2010|10:15am] dotgirl You know, it's funny - I read my friends list multiple times a day, I comment .. but I don't post. I've decided to change that! So how was everyone's holiday season? Mine was good and hectic. Chris' parents came to stay for a week, which was nice, but always throws me a little off my schedule. The biggest thing has been that I haven't menu planned for two weeks. I know it's mundane and silly, but with 2 kids in school and 2 full time jobs, it's necessary. By the time we get home in the evening, I just want to relax, and that leads to ordering in Chinese or picking up fast food - not good for our wallets or our waistlines. So every weekend, we look at what we have in the freezer, look at what's on sale at the grocer, and make a plan! I always build in a flex day in case Chris has an unexpected work dinner, or we're not in the mood for what's on the menu, but overall, we stick pretty closely to it. Not only is it a relief to know that I don't have to think at the end of the day, but that way I can do some (or all!) of the prep the night before, which means we get to eat before 7pm. Tonight? Baked french toast casserole, scrambled eggs, sausage, and fruit. 5 comments|post comment
